Beyond Sushi 37th Street is a 2,367-square-foot plant-based restaurant in Midtown Manhattan — one of the flagship locations in the Beyond Sushi brand’s expansion across New York City. The brief asked for an interior that was energetic, clean, and brand-consistent, while giving this particular location its own character within the broader family.
Studio RB designed the space to move: a fast-casual rhythm at the ordering counter, a slower dining experience in the main room, with materials and lighting calibrated to serve both. The result was one of the brand’s most photographed interiors — a space that proved plant-based dining could be genuinely compelling at scale.
